  • 1 large egg, 2 egg whites
  • 50 ml skimmed milk
  • Handful of baby leaf spinach, roughly chopped
  • 50g feta cheese
  • 1 tbsp olive oil


  1. Beat the eggs and stir in the milk until the mixture is consistent
  2. Add the feta cheese and the spinach and mix thoroughly
  3. Place a small frying pan on a medium heat, use a small amount of oil to coat the pan to ensure the omelette doesn’t stick (A maximum of 1 tbsp of olive oil)
  4. Add the eggs to the pan and push them into the centre of the pan as they start to cook, tilting the frying pan so the runny eggs go to the edge
  5. Once the underside of the omelette is cooked (i.e. the base is more firm and the top side is only slightly runny) remove from the heat and place the pan under a medium heated grill
  6. Grill until the omelette is thoroughly cooked, i.e. the eggs are no longer in liquid form
  7. Place the omelette on a plate and season with freshly ground black pepper

Tips & Alternatives

This is great served with a slice of wholewheat toast if you need to increase the carb content, alternatively if you are cutting out bread altogether you could try serving this with steamed broccoli.
