Healthy Greek Salad

Ideal for the busy bees amongst us, Greek Salad is extremely easy to prepare, tastes amazing and is super healthy! We’ve made this a little healthier by using half fat feta cheese instead of full fat to save on a few calories. The other super calorific ingredient is olive oil which, while extremely good for you as it’s full of good fats, it’s very very high in calories so please go easy. If you’re taking a packed lunch to work you can prepare a large batch of Greek Salad and store it in the fridge for the next few days.


  • 2 large tomatoes, sliced
  • ½ small red onion, sliced
  • Handful mixed lettuce leaves
  • ½ red bell pepper
  • ½ cucumber, sliced
  • 2 tbsp fresh basil, chopped
  • 75g feta cheese
  • 50g black olives, pitted
  • Freshly cracked black pepper
  • 1 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • 1 tsp dried oregano


  1. Combine all of the vegetables in a salad bowl, including the olives, and season with black pepper.
  2. Chop the feta cheese into 1cm cubes and add to the salad.
  3. To make the dressing, add the olive oil, balsamic vinegar and dried oregano to a tightly sealed plastic container and shake vigourously.
  4. Add the dressing to the salad and serve.
