Lemon Chicken With Cinnamon Sweet Potatoes

We’re huge fans of sweet potato so this awesome Lemon Chicken recipe certainly caught our attention. It’s easy to make, super healthy and ideal for anyone looking to drop a few pounds. Enjoy!


Makes 3-4 servings

For the chicken

  • 6 chicken thigh
  • Salt
  • Pepper
  • 1/2 onion
  • 4 cloves garlic
  • 1 tomato
  • 1 bunch parsley
  • 4 lemons, juiced
  • 1 tablespoon olive oil

For the sweet potatoes

  • 2 large sweet potatoes, cut into wedges (approx. 250g)
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • Salt
  • Pepper


  1. Heat oven to 400°F (200°C).
  2. Put chicken in a deep baking dish and season with salt and pepper to taste.
  3. In a small food processor, combine onion, garlic, tomato, cilantro, lemon juice, and olive oil.
  4. Blend for about 20 seconds. Pour mixture over chicken and roast in the oven skin side up for about 30 minutes or until internal temperature reaches 165 degrees.
  5. While chicken is cooking, coat sweet potatoes in olive oil and season with cinnamon and salt and pepper to taste.
  6. Place on a baking sheet and roast in the oven for about 25 minutes or until golden brown.
  7. When chicken is cooked through, remove from oven and let rest a few minutes before serving with sweet potatoes.
