When it comes to our recipes, we’re all about sharing those with the healthiest ingredients and this Rye Bread Turkey Sandwich is no exception.

If you haven’t tried rye bread before give it a go as it’s considerably more healthy than white bread and can be a great alternative to your usual brand of wholewheat.

Like good quality wholegrain breads, rye bread is high in fibre and is low on the glycemic index meaning it doesn’t cause a spike in blood sugar like most simple carbs.

Turkey is also a great for a healthy lunch as it’s high protein and low fat (even lower than chicken breast) and cucumber is a nice supplement as it’s packs a nutritional punch and is extremely alkaline so promotes a nice balance.

Ingredients

  • 2 slices of medium thick rye bread (166 kcal)*
  • 75g turkey breast, roasted (118 kcal)*
  • 1 tbsp low fat mayonnaise
  • 1 tbsp prepared horseradish
  • Handful rocket or lettuce leaves of your choice
  • 5-6 cucumber slices
  • Black pepper

Tips & alternatives

Oven roasted turkey breast is preferable, however, if you can only get turkey slices try to avoid the processed type which usually have added salt and water.
